Simple Chicken Vegetable Soup- Brought to you by the letter C

Chicken and Veggie Soup or maybe Alphabet Soup

It started simply, a little chicken broth, (how to make roasted bone broth) some chopped chicken meat. Added a couple carrots and celery stalks, raided the fridge found the celeriac and threw that in too Discovered a fun soup developing. 🙂 If I had chives, celery seed or cashews Id have added them too. However I decided against the cherries and chocolate (those became dessert to round out the theme)

The seasonings came from searching the spice and herb shelf for letter c ingredients- by now the kids were getting into the fun. We decided cumin was a good fit, but cinnamon probably wasnt, clove of garlic was approved. We served it up with a sprig of cilantro and it was delicious (and perhaps just as important- healthy & fun). A much better alternative to commercial alphabet soup and my kids had fun practicing their letters!

  • C Chicken Soup
  • 4-6 cups chicken broth
  • 2 cups chopped chicken (raw or cooked)
  • 2 celery stalks, chopped
  • 4 carrots, chopped
  • 1 celeriac root, chopped (mine was large- not sure what size they normally come- it was probably 3-4 cups chopped)
  • 1 tsp cumin
  • sea salt and pepper to taste
  • 2 cloves of garlic
  • minced onion flakes (would use fresh onion, but we were out and it didnt start with c so we cheated)
  • coconut oil to saute veggies
  • You can even cook steak simply by using best indoor grill.

I used my Dutch Oven (an anniversary present I helped pick out, and one of my favorites), sauteed the chopped veggies in a couple large tablespoons of coconut oil its health benefits – (see this post for details, I tend to be generous with it). Add chicken broth, chicken and seasonings. Simmer until chicken is cooked if starting from raw or until everything is tender and hot if your chicken is cooked. I believe it only took about 20 minutes, but I tend to wander away and lose track of time 🙂

Add already cooked noodles if youd like.

Top with a sprinkle of chopped cilantro or a sprig if youre fancier.

Then just to be fun we served it in our Corelle bowls. 🙂
