My husband is severely allergic to MSG in all its strange neurotoxic forms. Well actually, we are all allergic to it, but it gives him huge and terrible consequences involving explosive migraines and symptoms I wont describe for you
When we discovered this allergy I started looking into MSG free food for our family- this began our journey into the real food, Weston A Price Foundation, cooking from scratch living on a homestead world.
One of his favorite foods is onion dip with potato chips, it is a standard item on New Years Day and Super Bowl Sunday and it made its way onto many a buffet through out the year!
However, we found a problem The brand name onion soup mix (that we used to stir into sour cream to make the onion dip) had ingredients that resembled a list of OSHA controlled substances and included monosodium glutamate- not even hidden by one of its many secret names. So we hunted high and low, found a generic brand of onion soup mix that didnt have MSG, tested it on the hubby and when it passed, went with it. 🙂 I figured we only ate it 3-4 times a year it wasnt a big problem.
Then came New Years Eve 2012 I preparation for New Years Day celebrations I picked up the box of onion soup mix, rechecked the ingredients since they often change and found a suspicious ingredient- one of the items that means MSG might be present (natural flavorings) had been added! I supposed since it had been safe in the past I would give it a test run, had hubby test it (he has healed to the point where he can usually take a suspicious food have a tiny dollop of it on his tongue and feel it react or not without the dollop causing a full scale reaction as it would have in the past) but it failed the test, actually triggering some nausea.
Oh no!!! It would not be the normal celebration without onion dip, I looked at the ingredients on the box of mix and thought Ill bet I could make this myself!Home Made (Real Food) Onion Dip
I hit the internet looked at about 10 recipes got an idea for the common ingredients in make your own dip- eliminated the ones we avoid, grabbed what I had on the shelf and started mixing (and taste testing). My sister jumped in on the fun and within 45 minutes we had a workable option. Actually in about 20 minutes we had a workable option but then I accidentally spilled the freshly ground sea salt in it and we had to instantly double the recipe to cover it up. 🙂
I retested it and the measurements (I had kept track initially, but after the salt spill things got a little distracted) for the Super Bowl.
It got a second hubby thumbs up (more like 2 thumbs up, it would have been 10 fingers, but they were busy holding more chips). He actually insisted I make the home made option for Super Bowl since he says it is much better than a mix ever was!
Judging by the way it disappeared on New Years Day it was a hit with real foodies and SADers alike. 🙂 This not your average onion dip!
I share it with you Remember to make it ahead, the onion dip flavors need a chance to blend and grow, if you make it the day of the event it will work, but you will probably need to add more sour cream to tone it down the next day. (Ask me how I know and how I ended up with a 4 cup batch! Good thing we love it!)
Home Made, Real Food Onion Dip
- 1 cup real whole sour cream
- 1 tablespoon minced onion flakes
- 3/4-1 teaspoon minced garlic (about 2 fresh cloves)
- 3/4-1 teaspoon onion powder
- 1 tablespoon ORGANIC Better Than Bouillon Beef Flavor (do not use the non organic option for the sake of your health!) a better option, would be a concentrated or dehydrated real beef broth
- 1/4 teaspoon sea salt
- 1/8 teaspoon of pepper (white pepper is best, but black works too)
Simple mixing method:
Put all ingredients in a bowl and mix thoroughly. Put in fridge to let flavors develop overnight (or 12-18 hours). Serve with various chips, crackers and veggies to dip.A little more complicated, but it blends flavors and ingredients quickly and thoroughly:
Blend all ingredients except minced onions with an immersion blender or in a food processor. Stir in mixed onions, chill and let flavors develop in the fridge. Serve with anything that carries dip. 🙂
